The perfect brew
Green tea rewards a little care. Add a teaspoon to your cup or pot and pour over water just off the boil — around 80°C rather than fully boiling — to keep the flavour smooth and avoid bitterness. Steep for two to three minutes, then strain. The leaves will happily give a second, and even third, infusion.
